Badami Pasanday
Ingredients:
Beef pasanday 500 gm
Clarified butter ½ cup
Cloves 5
Black cardamom 1
Green cardamoms 4
Cinnamon 2 stick
Onion 1
Green chilies 3
Ginger (julienne) 1 tsp
Coriander leaves 2 tbsp

Ingredients for Marinade:
Hung curd 4- 5 tbsp
Poppy seeds 2 tsp
Ginger garlic paste 2 tbsp
Turmeric 1 tsp
Chili powder 1 tbsp
Coriander powder 2 tbsp
Raw papaya 2 tsp
All spice powder 1 tsp
Mace & nutmeg powder ¼ tsp
Salt to taste

Ingredients for Paste:
Almonds 12
Milk 4 tbsp

For Garnish:
Almonds(sliced) 4

Method:
Marinate beef with all marination ingredients and leave for 2 hours. Now heat clarified butter then adds onion and whole all spices and fry till golden. Then add marinated beef and cook well until meat gets tender. Remove almonds peel and blend it with milk to form paste. Then add this paste in beef and cook. When oil comes up add green chilies, coriander, ginger and almonds for garnish.

Beef Reshmi Pulao:

Ingredients for Stocks:
Beef 1/2kg
Sliced onion 1
Ginger (julienne) 1 tbsp
Black peppercorns 20
Cloves 10
Cinnamon 2 inch piece
Black cardamoms 2
Small cardamoms 2
Garlic 1 pod
Salt 1 tsp
Fennel seeds 2 tbsp
Whole coriander 2 tbsp
Water 8 cups

Ingredients for Pulao:
Oil 1/2 cup
Rice (soaked) 500 gm
All spice powder 1 tbsp
Ginger garlic 1 tbsp
Brown onion ¾ cup
Salt 1-½ tsp
Yogurt 1/2 cup
Cream 1/2 cup
Milk 1 cup

Method:
Cook stock ingredients with beef and cook until beef gets tender. Then strain beef and keep stock aside. Now heat oil and cook boil beef in it. Then mix yogurt, cream, milk and add to beef. Now add salt, all spice powder, ginger garlic paste, brown onion and cook well. Then add stock and rice and cook. Then serve with brown onion.
