Thai Red Curry with Vegetables:

Ingredients:
Oil ½ cup
Sliced onion 1 medium
Sliced red bell pepper 1 medium
Baby potatoes 4
Vegetable stock 1 cup
Coconut milk 1 cup
Tomatoes 2-3
Red curry paste 2 tbsp
Minced garlic 4 cloves
Minced ginger 1 tbsp
Cauliflower 1 small
Julienned carrots 1 cup
Spinach 1 cup
Lemon juice of 1 lemon
Basil leaves for garnish
Cooked rice 1 cup (to serve)

For Red Curry Paste:
Onion 1
Lemongrass 1 tbsp
Red chilies 1-2
Garlic 4 cloves
Sliced ginger 1 inch piece
Tomato ketchup 2 tbsp
Ground cumin 1 tsp
Coriander 1 tsp
Fish sauce 2 tbsp
Sugar 1 tsp
Chili powder ½ tbsp
Thick coconut milk 1-3 tbsp
Lemon juice 2 tbsp
Cinnamon 1 stick

Method:
Mix red curry paste ingredients and blend them. Now heat oil adds garlic, ginger, and onion and sautes them. Then add potatoes, cauliflower and fry them. Add tomatoes and cook. When tomatoes almost cooked completely then add stock, curry paste, coconut milk and cook. Then add carrots, red bell pepper, and spinach and saute them. Now add basil leaves, lemon and serve it with rice.


Kung Pao Spaghetti :

Ingredients:

Boiled spaghetti 1 packet
Oil ¼ cup
Sliced chicken breasts 300gm
Salt to taste
Black pepper as required
Minced garlic 4 cloves
Dry roasted peanuts ½ cup
Sliced spring onions 2

For Sauce:
Soy sauce ½ cup
Chicken stock ½ cup
Red chili paste with garlic2 tbsp
Sugar 1 tsp
Vinegar 2 tbsp
Corn flour 2 tbsp
Sesame oil 1 tbsp

Method:
Mix sauce ingredients and set aside. In pan saute chicken with garlic in oil. Then add sauce ingredients and cook add spaghetti when it becomes thick. Add salt, black pepper, spring onion, roasted peanuts, mix and serve.
