No Korean meal is complete without kimchi. It's a staple Korean side dish that has evolved with the history of Korea. Kimchi is a familiar food to Koreans in more ways than one. For example, instead of saying "cheese" while being photographed, Koreans say "kimchi!" It is one of the most prominent fermented foods of the world and one of the five healthiest.

Every late fall and early winter in Korea, "kimgjang" is held - an event in which a year's supply of kimchi is made with neighbors. In this episode, Benjamin visits Korea's biggest Buddhist temple, Haein Temple, to report on "kimjang."
