Hi I'm Scott Mayer. I'm the mixologist here at Miami's oldest bar in Cabaret, Tobacco Road.

Alright so here's a Dark & Stormy. This is a nice cocktail, kind of based similar to the Moscow Mule. So it's a ginger beer based cocktail. Basically starts out with the juice of one lime. All the juices here at Tobacco Road are fresh pressed for each cocktail. So we make sure we get the absolute freshest juice in all of your drinks. So we go ahead and we put a little bit of lime juice there. Then we take some dark rum, this is a dark rum from Bermuda. They actually add molasses to dark rum to make it sweeter. We then take the dark rum and the lime juice, add a little bit of ice.

Cap it in the Boston shaker. Give it a nice shake over our shoulder. The reason we shake a cocktail is to incorporate the juice and the spirit together. And also to chill and water down the drink just a bit, just to give it the proper flavor that you're looking for. A lot of times if you do not mix a cocktail properly, it will end up tasting harsh. It will taste too much alcohol or too much of the sour juice and not really get the flavor that you're looking for. So we go ahead and fill the glass about half way. Now we're going to go ahead and top that with ginger beer. We garnish that with a lime wedge and a nice big straw. That's it, the Dark and Stormy.
