Ingredients:
1kg Chicken
1 tbsp Ginger paste
1 tsp Garlic paste
1/2 cup Curd
Salt
1 1/2 tbsp Oil
1/2 inch Cinnamon stick
1 Mace
1 tbsp Coriander seeds
2 tsp Cumin seeds
5 Cloves
5 Black Pepper
5 White Pepper
5 Green Cardamom
1/4 cup Cashew nuts
3 Onions
2 tbsp Ghee
2 Bay leaf
5 Green Chillies, slit
1/4 tsp White Pepper powder
1 cup Water
1/4 cup Cream

Method of preparation:
In a bowl of chicken, add ginger paste, garlic paste, curd, salt, mix well and keep it aside to marinate.
Heat a vessel, add oil, cinnamon, mace, coriander seeds, cumin seeds, cloves, black pepper, white pepper, green cardamom, black cardamom, cashew nuts and saute them on medium flame.
Add onions, saute it until they turn soft.
Once the mixture cools down, grind them into a fine paste.
Add water to the mixture while grinding.
Heat a vessel, add ghee, bay leaf, ground paste and saute it for 2 mins.
Add green chillies and saute it for 3-4 minutes.
Add the marinated chicken, turn the flame on high and saute it for 5 minutes.
Add white pepper powder, saute it for a minute and add water.
Close the lid and let it cook for 12-15 minutes.
Turn the flame on low, add cream, mix well and switch off the flame.
Our Malai Chicken is ready to plate.
