When people think of Chinese food, cheese isn’t usually the first thing that comes to mind. But people in China have been making the milk staple for centuries.

Rubing and rushan are two types of cheese from Yunnan Province in southwestern China. They’re usually served deep-fried with a bit of sugar, and they’re a specialty of the Bai people, who have been making cheese for generations.
