Today's Special: No-Bake Chocolate Biscuit Cake

There's a Malaysian non-baked dessert called Kek Batik, named for the cake's resemblance to the fabric. It’s made with Marie biscuits and chocolate sauce, or combined with a runny custard made of egg, condensed milk and Milo. In the UK, the Hedgehog Slice is made in a similar way, with rich tea biscuits and sugar syrup flavoured with cocoa. This simple dessert is apparently Queen Elizabeth II’s favourite tea cake!

Star2.com food channel curator Jane F. Ragavan uses the Hedgehog Slice as the basis for this non-baked chocolate biscuit cake. The biscuits are wholemeal digestives, so the dessert contains nuts and it also has a chocolate ganache topping. The cake is made in a round tin and then cut into wedges. It's so good, people will think it's baked.
