In this episode, she shows you how to make Thai-inspired fish cakes. It's a popular street food across Thailand, usually served in morsels, with chilli sauce or a sour tamarind-based dip. It's only in restaurants that the chefs make them the size of ice hockey pucks.

Thai fish cakes have all the flavours of Thailand: sweet. sour, salty and spicy, thanks to ingredients like chillies, kaffir lime leaves, belacan and coconut milk. The paste also requires fresh fish. All these are what make the snack so delicious.

It’s not easy to get excited about food preparation at the start of a working week. But this three-ingredient fish cake recipe is just the thing for amateur cooks. All you need is one tin of chilli tuna, one large potato, two hard-boiled eggs and a bit of hot oil.
