Today's Special: No-Bake Icebox Cake

The old-fashioned icebox cake is a biscuit dessert with a long history. The classic version comprises two ingredients: biscuits are layered with whipped cream in the shape of a round cake and then refrigerated. Once the biscuits soften, the cake can be sliced. So basically, it's a cookies and cream cake.

In this version, however, Star2.com food channel curator Jane F. Ragavan takes the frosting a notch up by adding cream cheese. This makes the frosting more stable and allows the cake to be stored for longer. And if you’re into fancy decoration, go crazy with your piping bag.

Note how the biscuits are arranged, too – the chocolate cookies are sandwiched with the frosting and placed in a baking tin on their sides. And see how the cake is cut diagonally, so that the vertical brown and white stripes show is the slices.
