Flattened Rice Vada and Cucumber Chutney With Chef Samatha Only On VarietyVantalu.

Ingredients :
Poha/Flattened Rice - 1/4 kg
Rice Flour: 1/2 Cup
Onion - 1 small sized finely chopped
Green chili - 4 finely chopped or as per taste
Coriander leaves - 2 Tablespoon finely chopped
Curry Leaves - 10-15
Cumin Seeds - 1 tsp
Curd - 1/2 cup
Salt - as per taste
Red Chilli Powder - 1 Tsp
Oil - for frying

Method:
1. Wash and soak the Flattened Rice in water for 10 to 15 minutes. And squeeze the water from Flattened Rice.
2. Now, take a bowl. Add soaked Flattened Rice and knead it.
Add rice flour, Onion, green chili, coriander leaves, curry leaves, cumin seeds, curd, salt and mix well. Add little water to make a dough-like mixture.
3. Meanwhile, heat oil for frying.
4. Make a small round vada from the mixture. Press lightly, keep it thick.
5. Once the oil is hot, fry the vada on a medium flame.
6. When it turns crispy and the color of onion changes to a golden brown then vada is ready. Press it with a spoon to check.
7. Take them out on a plate.

Ingredients For Cucumber Chutney:
Oil - 1 tablespoon
Cumin Seeds - 1 teaspoon
Urad Dal - 1 teaspoon
Split Bengal gram (chana dal) - 1 teaspoon
Ground Nuts - 4 Tsp
Salt to taste
Dry Red chilies - 4
Tamarind pulp

For Tempering :
Oil - 1/2 Tsp
Mustard Seeds - 1/4 tsp
Cumin Seeds - 1/4 tsp
Urad Dal - 1/4 Tsp
Asafoetida - 1/4 tsp

Method:
1. Add oil in the pan, once the oil is hot, add split Bengal gram, urad dal, cumin seeds, ground nuts, cumin seeds. let's fry it for until ground nuts change the color.
2. In the same pan, add in the cucumber pieces. Sauté for some time over medium heat and remove from pan. The cucumber should still be raw with a crunch.
3. Let all the fried ingredients cool down
4. Now add fried ingredients, cucumber pieces in the mixer
5. into the mixer, add and salt to taste, soaked tamarind just runs the mixer for a few seconds. The cucumber pieces should just mix with the rest of the ingredients. You should still be able to see the chunks of cucumber. Adjust salt to balance the tang if required.

For Tempering:
1.Heat oil in the same pan over medium heat. Add all the ingredients one by one and fry till the lentils turn golden brown.
2. Finally, add asafoetida and turn off the heat. Transfer the tempering to the chutney.

Yummy 'Poha Vada' is ready to be served with Cucumber chutney.
