Bruled Mango With Saffron Cream

- Heat small amount of cream in a cup and steep 1tsp saffron for a few minutes, then let cool.

- In a bowl, add saffron cream to ½ cup regular whipping cream and 2 tablespoons sugar.

- Whip until soft peaks form.

- Cut Mango and sprinkle with demerara sugar, then torch until brûléed.

- Serve with dollop of saffron cream.
