This is a healthy twist on your typical boozy Christmas pud that won’t leave you feeling guilty for indulging on this sweet festive treat.

RECIPE
INGREDIENTS:
225G OF MEDJOOL DATES
1 ORANGE
170G OF MACADAMIA NUTS
1 TSP OF VANILLA EXTRACT
2 TSP OF CINNAMON
1/2 TSP OF GROUND GINGER
1/2 TSP OF GROUND CLOVES
1 SMALL PINCH OF SALT
2 TBSP OF HONEY
2 TBSP OF COCONUT OIL

CASHEW VANILLA CREAM:
150G CASHEW NUTS
150ML CARTON COCONUT MILK
1⁄2 TSP VANILLA EXTRACT OR POWDER
1⁄2 TSP CINNAMON TINY PINCH SALT
2 MEDJOOL DATES

METHOD
TO MAKE THE PUDDINGS, ZEST THE ORANGE AND ADD THIS WITH THE REST OF THE INGREDIENTS INTO THE FOOD PROCESSOR. BLITZ UNTIL FULL COMBINED.

SCOOP THE MIXTURE INTO LITTLE GREASED RAMEKINS AND PLACE INTO THE FREEZER FOR 1 HOUR, THEN PLACE INTO THE FRIDGE UNTIL EATING TIME.

TO MAKE THE CASHEW NUTS CREAM SOAK THE CASHEW IN WATER FOR 4 HOURS THEN DRAIN, BLEND WITH THE COCONUT MILK, VANILLA, CINNAMON AND DATES UNTIL SMOOTH THEN POUR OVER THE TOP OF PUDDING AND ENJOY!
