For Keralites, Onam Sadya is not complete without the preparation of Avial. Made with a variety of vegetables, curd and coconut, this recipe is a good alternative for the vegetarian population out there! Simple, yet delicious to make, this recipe is both high in nutrients and calories.

Ingredients
Suran (Elephant Foot Yam)
Arbi (Colocasia)
Potatoes (Optional)
Raw Bananas
Drumsticks
Turmeric Powder
Salt To Taste
Carrots
Gawar (Cluster Beans)
Beans
Sour Curd
1 Tsp. Raw Coconut Oil

Ingredients For Tempering
½ Tsp oil
1 Tsp. Mustard Seeds
Curry Leaves

Ingredients For Masala Paste
½ Coconut
1 Tsp. Jeera (cumin)
3-4 Green Chillies

Tips

1. Soak vegetables in water to avoid discoloration.
2. Add salt to vegetables to reduce cooking time
3. To retain color of vegetables, cook them in salted boiling water until 3/4th done. To avoid further cooking, drain water from vegetables and put in cold water
