Tangy Aloo Tamatar Sabji

Ingredients:

1/2 cup tomato puree
250 gm potatoes
1 onion chopped
1 tbsp ginger chopped
1 tbsp green chillies chopped
1 tbsp cumin seeds
1 tsp sugar
1 tbsp coriander powder
1/2 tbsp turmeric powder
1/2 tbsp red chilli powder
1/2 tsp asafetida
1/2 cup water
2 tbsp oil
Few coriander leaves chopped
5-6 curry leaves
Salt to taste

Preparation:
Heat the oil.
Add cumin seeds, chopped green chillies and curry leaves.
Add tomato puree and mix well. Add sugar, coriander powder, turmeric powder, red chilli powder and ginger chopped and mix well.
Add potatoes, salt and coriander leaves. Mix well.
Garnish with coriander leaves.
