DUM KA KHEEMA
(Minced Meat)

Dum ka kheema (slow cooked minced mutton)
Minced mutton marinated in Indian herbs and spices slow or moderately cooked to perfection. From the royal kitchens of Hyderabad.

INGREDIENTS:
Minced Mutton-1/2kg
Onion- 150gm/3 medium size
Oil- ½ 2 cup
Chashew - 50gm
Almonds- 15-20
Ginger garlic paste- 1tbsp
Chili powder- 1tsp (or according to taste as we will be using green chilies as well)
Turmeric- 1/2tsp
Roasted cumin powder- 1tsp
Roasted coriander powder- 1tsp
Garam masala powder- 1tbsp
Juice of a lemon (optional)
Salt to taste
Curd- 1 cup
Green chilies- 5-6
Fistful of mint
Fistful of fresh coriander
For Dum
1 medium sized charcoal
Pure ghee/oil- 1tbsp
METHOD
Roast almonds and cashews and keep aside, dry roast cumin and coriander seeds and keep side. powder roasted cumin and coriander seeds and keep aside. Now make a fine paste of almonds, cashews, green chili, fresh coriander and mint and keep aside. Wash minced meat properly and add it to a large bowl for margination. Now to the meat add all ingredients (ginger garlic paste, chili powder, turmeric, cumin powder coriander powder, garam masala powder, salt and curd) and mix properly with the minced meat as shown in the video and marinate it for 1 hour or if you are in a hurry at least marinate it for 15 minutes. Now add previously prepared green paste to the marinated minced meat and mix properly keep aside. Heat a pan on medium heat add oil to it. Once the oil is heated add thinly sliced onion and fry it till it starts changing color, at this stage add marinated minced meat and mix it well cover and cook for 8-10 minutes on medium heat unlit the moisture is reduced, keep stirring in between. Now add lemon juice and mix well and cook till oil leaves sides. Lower the flame at this stage add chopped coriander and mint mix well and cook on low flame for another 4-5 minutes. Now time to give dum for our kheema (minced meat) place burning charcoal in a small bowl and place it over the cooked minced meat and add 1tbsp of pure ghee/butter/oil as preferred and quickly cover it and leave it for 1-2 minutes. Take out the charcoal bowl and give a good mix to the cooked minced meat.

Dum ka kheema (Minced mutton) is ready. Serve it hot with Roti, Plain naan, Butter Naan, or paratha’s.
