Pesto Chicken Sandwich. Recipe by Always Yummy!

Well-known hot Pesto Chicken Sandwich is quite easy to cook. Chicken and cheese sliced thin and seasoned with sauces and roasted tomatoes, it’s a perfect breakfast or evening meal. Sandwich is convenient to take to work or school as a very tasty snack.

✅ Ingredients:
• 8 sliced bread
• cherry tomatoes – 7 oz / 200 g
• mozzarella cheese – 7 oz / 200 g
• parmesan cheese – 2 oz / 50 g
• smoked chicken – 9 oz / 250 g
• pesto sauce – 2 oz / 60 g
• tomato sauce – 2 oz / 60 g
• olive oil – 1 tbsp
• butter – 1 oz / 30 g
• salt – ½ tsp

✅ You will need:
• carving board
• pan with a lid
• baking dish
• oven

✅ Preparation:
1. Preheat oven to 400°F / 200°C, lay out the tomatoes into a baking dish, pour with 1 tbsp of olive oil, salt and put into the oven for 12 minutes.
2. Spread a pesto sauce on a slice of bread, make a layer of mozzarella on it, follow with a layer of smoked chicken, top with the baked peeled tomatoes and sprinkle with grated parmesan.
3. Spread a tomato sauce on the second slice of bread and place on the sandwich with the sauce down. Press the sandwich gently.
4. Heat a pan over medium heat and add 1 tbsp of butter, lay out the sandwiches and fry for 1,5 minutes on each side with a lid covered.
5. Serve your Pesto Chicken Sandwich hot.

❗️Advices:
1. Serve panini with vegetable salad.
2. You can take any meat instead of chicken.
3. Use a tomato sauce optionally.
