DEFINICION DEL ESPARRAGOS.
El espárrago, o espárrago de jardín, nombre popular de hierba de gorrión, nombre científico Asparagus officinalis, es una especie de planta con flores perennes del género Asparagus. Sus brotes jóvenes se utilizan como verdura de primavera.
Alguna vez se clasificó en la familia de los lirios, como las especies relacionadas de Allium, cebollas y ajo. Sin embargo, la investigación genética coloca lirios, Allium y espárragos en tres familias separadas: las Liliaceae, Amaryllidaceae y Asparagaceae, respectivamente, con las Amaryllidaceae y Asparagaceae agrupadas en el orden Asparagales. Las fuentes difieren en cuanto al rango nativo de Asparagus officinalis, pero generalmente incluyen la mayor parte de Europa y Asia occidental templada. Se cultiva ampliamente como cultivo vegetal.
