Corn Mango & Watermelon Salad
Ingredients
1 cup corn
1/2 cup tomatoes or as required (diced)
1/2 cup English cucumber or as required (diced)
1 cup mangoes or as required (pitted & diced)
1 cup watermelon or as required (diced)
1 cup onion or as required (diced)
1 - 2 spring onions or as required (diced) (optional)
1/4 cup bell peppers or as required (optional)
Fresh coriander handsful
1 - 2 green chili or as required (chopped) (optional)
9 -10 almonds halves or full (optional)

Black seeds (kalonji) optional for garnishing

Dressing Ingredients
2 Tbsp. extra virgin olive oil
1 Tbsp. apple cider vinegar
1 & 1/2 Tbsp. lemon juice
1/4 Tsp. Crushed black peppercorns
1 Tsp. sea salt or salt or to taste

Spring Mix Salad
Ingredients
1 cup spring mix or as required
1 cup tomatoes or as required (diced)
1 cup English cucumber or as required (diced)
1/2 cup onion or as required (diced)
Fresh coriander handsful
1/2 roasted cashews halves or full or as required (optional)

Black seeds (kalonji) are optional for garnishing

Dressing Ingredients
1/2 Tbsp Honey
1 & 1/2 Tbsp. extra virgin olive oil
1 Tbsp. apple cider vinegar
1 Tbsp. lemon juice or to taste
1/4 Tsp. Crushed black peppercorns
1 Tsp. Himalayan salt or salt or to taste

1/2 Tsp. Sesame Seeds (optional)
