Portland baker Ken Forkish on how to make crusty, artisan breads and pizzas at home

Ken Forkish, the James Beard Award-winning author of "Flour Water Salt Yeast," is giving home bakers the confidence to create their own breads at home. Forkish explains the ingredients and tools needed for making a successful loaf and what types of breads are the easiest to pull off in a home kitchen. Forkish, who owns three restaurants in Portland including Ken's Artisan Bakery, Ken's Artisan Pizza and Checkerboard Pizza, also discusses how the restaurant industry is handling the pandemic and why he left his corporate job to pursue baking. Forkish's second book, "The Elements of Pizza" is available now.
