Chinese Veg Fried Rice in KCS Style

Chinese veg fried rice by KITCHEN COOKING SECRETS:
Today I am going to make Chinese veg fried rice in a different style.
Basically, the fried rice recipe is made with an egg omelet and with finely chopped veggies (veggies are up to your choice). Important instruction by KCS do not to overcook the vegetables and it has to be crunchy and has to hold its shape.
Items quantity
Cabbage 1 cup chopped
Capsicum 3 (different colored ½ each)
Potato 1 medium size chopped
Egg 2s
Carrots 2 medium
Peas 1 cup
Tomato sauce 2 tbsp
Black pepper 1 and a half tbsp.
Soya sauce 1 tbsp.
Salt 1tbsp
Oil 1 cup
Water as required
Garlic ginger paste 1tbsp
Chicken stack 1s
Coriander powder 1tbsp
Turmeric powder 1tsp
Rice basmati rice (boiled half kg)

Step 1:
Boil the slices of one cup carrots and one cup green peas together for 3 minutes. Note that never over boil the veggies. After that drain them from the water.
Step 2:
Take a pan add oil to it. Preheat cooking oil for 1 minute after that add the different colored chopped capsicum and fry them 2 to 3 minutes until they softened. Take out the fried capsicum from the pan. Now fry one chopped potato into the same pan for three or four minutes not overcook the potato.
Now take 2 eggs crack them into the same pan and fry them roughly.
