नारळाच्या रसातली अळूवडी
अळुवडीचा हा प्रकार कोकणात पूर्वी पासून केला जातो. पण हल्लीच्या ह्या धकाधकीच्या जीवनात पुरेसा वेळ मिळत नसल्यामुळे हे चविष्ट पदार्थ केले जात नाहीत.
आपली तीच परंपरा मोडली जाऊ नये ह्यासाठी मी हा पदार्थ तुम्हाला करून दाखवणार आहे म्हणजे तुम्ही सुद्धा हा करून बघाल आणि घरच्यांना खाऊ घालाल.

साहित्य :-
१० अळूची पानं (10 Taro Leaf)
३ चमचे लाल मसाला(2 spoon Red Masala)
२ चमचे गरम मसाला (2 spoon Garam Masala)
२ चमचे हळद(2 Spoon Turmeric)
½ चमचा लाल मिरची पावडर (½ Spoon red chilli powder)
½ हिंग (½ asafoetida)
१ चमचा धणे पावडर (1 spoon Coriander Powder)
१ चमचा जिरे पावडर (1 spoon Cumin Powder)
१ चमचा दालचिनी पावडर (1 spoon Cinnamon Powder)
४ चमचा चिंच गुळ चटनी (4 spoon Tamarind and Jaggery Paste)
१ किसलेला नारळ (1 Crushed Coconut)
८-१० काळीमीरी (8-10 Pepper)
५-६ दालचिनी तुकडे (5-6 Cinnamon)
५ मोठे चमचे बेसन (5 Table Spoon Gram Flour)
चवीनुसार मीठ (Salt as per taste)
५ मोठे चमचे तेल (5 Table Spoon Oil)
आवश्यकतेनुसार पाणी (Water as per require)

Method:-

Add Pepper, Cinnamon, Salt, Tamarind and Jaggery Paste and water in crushed coconut and make a fine paste.
Transfer Fine Paste of coconut into a strainer and strain milk from paste.

Squeeze all remaining milk with help of clean hand
Keep a side squeezed portion of coconut.
To make a paste for taro leaf rolls, add gram flour in a bowl, Tamarind and Jaggery Paste, all spices, salt and water gradually and mix well.
Add water gradually and make lump free paste.
Add squeezed portion of coconut and mix well
Check a taste of paste if required add salt, spices as per requirement.
Here we have clean and wash and remove stalk of taro leaf properly to make rolls.
Medium and small size 5 leaf uses to make a roll
Press stalk of all leaves with the help of bowl.
Now take bigger one leaf out of 5 and gradually spread gram flour paste on leaf
Keep 2nd leaf exactly reverse on 1st leaf and press gently.
Same to be follow for rest 4 leaves.
Gram flour paste spread on all leaves
Now make a roll
Fold a side and spread gram flour on side
Repeat the same for 2nd side
Now make a roll slowly and spread gram flour on fina
