Mutton paaye (trotter)recipe by dine at home...

Ingredients;
Trotter : 6
Oil : 1/2 cup
Freshly grounded Ginger garlic paste : 1 tbs
Onion :1 small
Tomato : 1 small
Freshly grounded Coriander powder: 1-1/2 tbs
Turmeric powder :1/2 tsp
Nutmeg powder: 1/4 tsp
Pink salt : 1 tbs or as to taste
Red chilli flacks: 1 tbs or as to taste
Hot water : 2 liter
Backing soda : 1 tsp ( for soaking)
Fresh coriander: as required
Green Chili chopped:1
Ginger 1-2 inch piece julienne cut

Directions;
Wash and clean trotters. Soak them in enough water for at least 1 hour or overnight, This helps to reduce the cooking time . Now discard the soaking water and rinse well.
Take pressure cooker or a large pot heat oil and add onion fry until golden brown.
Add freshly grounded ginger garlic paste and sauté for 2-3 minutes.
Add trotters and give it a good mix and fry for 1-2 minutes.
Add freshly grounded coriander powder, red chili flacks and salt and sauté for 5 minutes.
Add samal tomato mix well add 2tbs water and cook until oil separates, add turmeric and mix well
Now add 2 liter of boiling hot water simmer for 4-5 minutes. Now close pressure cooker and cook for 40-59 minutes, please follow the pressure cooker safety guide line.
Add nutmeg powder and put it on simmer for 10 minutes or until desired consistency.
Mutton paye is ready, garnish with fresh coriander, green chilies and ginger, serve hot with nan or parathas.


( If someone doesn’t wish to use pressure cooker, follow same process and after adding water and few boil, lower the flame and let it cook for 5-6 hour until PAYE meat is very tender. Once its done, follow the last step of PAYE. )
