Chinese recipe of Yangzhou fried rice, commonly known as Yang chow fried is the perfect wok recipe to make at home. It is topped with omelette and the rice are fried with other ingredients that gives it a unique taste.

Yang Chow Fried Rice:

Ingredients:

Cooked rice 2 cups
Oil 4 tbsp
Egg 1
Diced sausage 4 pieces
Diced carrots 2 small
Chopped onion 1 small
Minced garlic 6 cloves
Sweet peas (can or frozen) ½ cup
Soy sauce 2 tbsp
Fish sauce 2 tbsp
Chopped spring onion 1 stalk
Salt to taste
Ground black pepper as required

Method:
Make omelette with egg and cut it in strips. Cut sausages in cube and fry them. Sauté carrot in pan .Then fry sweet peas. Now sauté garlic in oil then add onion and fry. Now add rice, sauces, seasonings, other ingredients and mix well. Add spring onion and serve.

Chicken Jalfrezi :

Ingredients for Chicken:
Julienned chicken 300 gm
Ginger garlic paste 1 tbsp
Red chili 1 tbsp
All spice 1 tsp
Salt to taste
Soy sauce 2 tbsp
Chili sauce 2 tbsp
Black pepper 1 tsp

Other ingredients:
Yogurt ½ cup
Tomato puree 2 cup
Sliced onions 2 medium
Julienned capsicums 2
Julienned tomatoes 2
Julienned ginger 3 tbsp
Oil ¼ cup

METHOD:
Marinate chicken with all ingredients. Heat oil adds tomato puree and cook. Then add chicken and cook until it gets tender. Now add yogurt, vegetables and cook for 5 minutes then serve.
