Pizza sauce and dough recipe

For the sauce:
1 large can crushed tomatoes
1 regular sized can of fire roasted tomatoes.
1/2 cup grated red onion
2 teaspoons garlic
1 to 1 1/2 tablespoons oregano
1/2 teaspoon hot red pepper flakes
1/2 teaspoon sweet basil

For the dough:
4 cups hot water
1 tablespoon sugar
1 tablespoon yeast
6 to 7 cups of bread flour.
1 tablespoon salt
1 tablespoon granulated garlic
2 tablespoons Italian herb mix.
