Liver That Doesn't Suck | Spreadable Pâté |

Liver is SO NUTRITIOUS. Liver can taste good. Here we make a keto spreadable liver pate that actually tastes good. High fat, low carb.

This recipe makes a lot of this spreadable pate. Pate is so rich and nutrient dense, one spoon full is all you need. So feel free to cut this recipe by half unless you want to store a bunch in your freezer.

Liver Pâté:

1 cup beef liver
1/2 chicken liver
1 lb beef suet
6-8 sage leaves
3 garlic cloves
1/2 red onion
Salt, pepper, & truffle oil (to taste)

1) In a heavy pan add chopped beef suet. Render at least 1/2 cup of beef suet into liquid fat and strain into measuring cup. Set aside.

2) Finely chop/dice the sage, garlic, and onion and sauté in the same heavy pan until slightly brown.

3) Chop beef liver into 1-inch cubes. Add beef and chicken liver to the pan. Cook until browned. Season with salt and pepper.

4) Let cool, then add to a blender or food processor. Add 1/2 cup of rendered fat. Blend until smooth. Season with truffle oil, salt, and pepper as necessary.

5) Spread on vegetables, parmesan crisp, or pork rind. Enjoy!
