Baked Apple in Cheesecake: Festive recipe for the holiday season

Here's how to make our festive Baked Apple in Cheesecake. Don't forget to subscribe to our channel first!

You'll need (for two portions):

- 2 medium-sized apples

For the cheesecake:

- 1 cup low fat mascarpone
- 1 egg
- 1.2 oz sugar
- 1 tsp cinnamon
- 1 tsp vanilla flavoring
- 1 tbsp semolina
- 3.5 oz cream cheese
- 1 tsp orange zest

For the apple filling:

- 1.8 oz ground almonds
- 1.8 oz icing sugar
- 4 tbsp Amaretto
- 2 tsp brown sugar
- 2 tbsp chopped hazelnuts
- 4 tsp cranberries
- 1 tsp cinnamon
- 1.6 oz rye bread, chopped up
- ½ tsp ground ginger
- ¼ tsp ground lemongrass
- 1 tsp orange zest

Here's how:

1. Mix all the ingredients for the cheesecake using an electric whisk and add the mixture to a small, round casserole dish.

2. Cut away the top quarter of the apple and hollow it out. Make sure to keep the apple top for later! Place the hollowed out apple in the cheesecake mix.

3. To prepare the apple filling, knead the almonds, icing sugar and two tablespoons of Amaretto into a marzipan. To do so, you'll need to mix the ingredients thoroughly for a long time. While you can add a little more Amaretto if needed, just be aware that too much liquid can make the marzipan very sticky. Once you've made a compact, slightly sticky ball from the mix, press it flat onto the bottom of the bowl.

4. Next, add the rest of the ingredients on top of the marzipan and knead them it. You can now fill the apple with your marzipan.

5. Place the top back on the apple and bake everything at 320°F for 40 minutes in a convection oven.
