Want to know how to make mince meat from scratch? Make showstopping burgers with the help of the Good Housekeeping cookery team.

1. To make mince using a food processor: First cut meat into about 2.5cm (1in) square chunks, if butcher hasn’t already prepared it. Put a handful of meat into food processor and pulse for a few seconds at a time until meat is just starting to form a ball on sides of bowl. Remove and set aside, and repeat with remaining meat.

2. To make mince by hand: First trim any fat and sinew if necessary and cut meat into thin strips, using a meat cleaver or large sharp knife. Once all meat is sliced, take a second meat cleaver or sharp knife in other hand and chop using both. Use a strong hammer action and keep bunching meat together and turning it regularly until meat resembles coarse mince.

3. Leaner cuts like rump make excellent mince for beef burgers. For a ragu or chilli where you’ll be slow-cooking meat, go for a cheaper, tougher cut like beef chuck that will soften during cooking.
