Mutton keema
Ingredients:
4 tbsp Oil
2 tbsp Ghee
4 Onions, sliced
1 tbsp Garlic paste
1 tbsp Ginger paste
1 tsp Red Chilli powder
1/2 tsp Turmeric powder
1 tbsp Coriander seed powder
5 Green Chillies, finely chopped
3 Tomatoes, grated
1 cup Yogurt
1/2 kg Mutton Mince
Fresh Mint Leaves, finely chopped
1/2 cup Fresh Coriander Leaves
1 tbsp Garam Masala powder
Salt to taste
1 cup Milk

For Assembling:
3 cups Basmati rice, Par Boiled
Rose Water
1 tbsp Ghee
Coriander leaves, finely chopped
Mint leaves, finely chopped
Fried Onions

Ingredients for Garam Masala:
2 tsp Cumin seeds
2 tsp Coriander seeds
3-4 Green Cardamom pods
1 Black Cardamom
1 inch Cinnamon stick
1 tsp Mace
1 tsp Black peppercorns
6 Cloves

For Rice:
3 cups rice,
Cinnamon, cloves
Green cardamoms
Black peppercorns
Salt to taste
Water as required

Method of preparation:
Heat oil and ghee in a vessel, add onions, garlic paste, ginger paste, dry masalas, green chillies, saute them.
Add tomatoes, yogurt, saute them till the oil oozes out.
Now add minced mutton, mix well and saute them on high flame.
Add mint leaves, coriander leaves, garam masala, salt, cover and cook it for 10-15 minutes.
Add milk and mix well.

For Garam Masala:
Dry roast all the spices and grind them into a fine powder.

Assembling:
In a vessel spread a layer of the minced mutton and top it with rice.
Sprinkle few drops of rose water, ghee, coriander leaves, mint leaves, fried onions, cover it and cook it for 20 minutes.
