1 glass Water
Bitter Gourd, cleaned and slit in middle (discard the innards)
½ tsp. Salt
2 Green Chillies
2 Onions, sliced
Salt, to taste
3 potatoes, boiled and mashed
Red Chilli Powder
Coriander Powder
Cumin Powder
Turmeric Powder
Garam Masala
1 tsp. Fennel Seed Powder
2 tsp. Curd
Dry Pomegranate Powder
Red Chilli Powder
Turmeric Powder
Garam Masala

1. Boil water in a wok and add the bitter gourd to it. Boil for 10 minutes and keep aside.
2. Sprinkle ½ tsp. Salt on it.
3. Heat oil in a pan and add green chillies, onions and salt. Cook until the onions are golden brown in colour.
4. Add salt, red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala and fennel seed powder to the mashed potatoes and mix well.
5. Squeeze out the water from the bitter gourd and stuff them with the spiced mashed potatoes.
6. Heat oil in a pan and cook the stuffed bitter gourd in it.
7. Then add the fried onions, curd and mix well.
8. Now add dry pomegranate powder, red chilli powder, turmeric powder and garam masala. Mix well.

Bharwan Karela is ready to eat!!
