Achari Bhindi is an easy to make spicy vegetarian main course recipe where Bhindi is cooked in delicious tomato gravy and aromatic Indian spices.
Ingredients:
1 tbsp Oil
1/2 Kg Okra (Bhendi), cut in 1 inch pieces
2 tbsp Oil
1 tsp Fennel Seeds
1 tsp Mustard Seeds
1 tsp Kalonji
8-10 Fenugreek Seeds
1/2 tsp Grated Ginger
3 Tomatoes, grated
1/2 Cup Curd
1/2 tsp Turmeric Powder
1 tsp Red Chilli Powder
2 tsp Coriander Seeds Powder
Salt to taste
Method:
- In a pan add little oil. Then add chopped bhindi and saute it for few minutes till the bhindi is cooked.
- In another pan heat some oil.
- Add fennel seeds, mustard seeds, kalonji, fenugreek seeds, grated ginger and grated tomatoes. Mix well.
- Add curd and mix everything well.
- Once the water dries out add turmeric powder, red chilli powder and coriander seeds powder. Saute well till the gravy releases its oil.
- Then add salt and stir fried bhindi. Mix well.
- Cover it for two minutes and let the sabzi cook.
- Achari Bhindi is ready to be relished!
