Pumpkin Curry Soup

Here's the perfect soup for those winter afternoons and evenings!



Ingredients:
• 2 tbsp. butter
• 1 cup chopped onion
• 2 crushed garlic cloves
• 2 tsp. curry paste
• ½ tsp. salt
• ½ tsp. black pepper
• 3 cup vegetable broth
• 15 oz. can pumpkin
• 1 ½ cup cream
• 1 cup coconut cream
Instructions:
1. Melt butter in a saucepan
2. Add onion and garlic, cooking till transparent
3. Stir in the curry, salt, and pepper and cook for one minute
4. Add the broth
5. And pumpkin and coconut cream
6. Bring to a simmer
7. Cook uncovered for 20 minutes
8. Stir in cream just before serving
