Sabudana Khichdi - साबूदाना खिचड़ी - Vegetarian Snack Recipe

Sabudana Khichdi is a special Maharashtrian recipe. Its a delicious snack which is also specially made during fasts (upvas).

Ingredients:

१ tbsp तेल

१ tsp जीरा

६-७ कड़ी पत्ता

४ कटी हुई हरी मिर्च

२-३ tsp शक्कर

नींबू का रस

धनिया पत्ता

३/४ cup भुनी हुई मूँगफली

२ उबले और काटे हुए आलू

१ cup साबूदाना

Method:
- Wash the sabudana thoroughly and soak them in water in a flat plate for 6 - 7 hrs
- After it has soaked well, add sugar,salt, coriander leaves, coarsely ground roasted peanuts, lemon juice to the bowl containing soaked sabudana.
- Heat oil in a pan, add cumin seeds, curry leaves, green chillies, saute it and add boiled and chopped potatoes and fry it for a minute
- Turn off the flame and add the sabudana mixture
- Quickly mix all the ingredients. cover the pan with a lid and cook it in low flame for not more than 2 mins.
- The sabudana khichdi is ready to be served hot.
