beer batter apple fritters recipe

2 cups (500 ml) cake flour
1 cup (250 ml) cornmeal
1⁄4 cup (60 ml) sugar
1 tbsp (15 ml) baking powder
1 tbsp (15 ml) compliments ground cinnamon
1⁄8 tsp (0.5 ml) salt
1 cup (250 ml) compliments de-alcoholized beer
3 eggs
1⁄4 cup (60 ml) melted butter
1 orange, zested and juiced
1 tsp (5 ml) sensations by compliments pure vanilla extract
3 compliments cortland apples, diced
canola oil for deep-frying
icing sugar for dusting

1. in a large bowl, sift together the flour, cornmeal, sugar, baking powder, cinnamon and salt. set aside. in another bowl, whisk together beer, eggs, butter, 1 tbsp (15 ml) orange zest, 3 tbsp (45 ml) orange juice and vanilla. stir wet ingredients into dry ingredients until just moistened. fold in apples.
2. heat a large saucepan filled with 2-in. of oil over medium-high heat until an instant read thermometer reads 375°f (190°c). working in batches, carefully drop heaping tablespoons of batter into hot oil and fry until golden brown, about 2 min. per side. using tongs, carefully remove fritters from oil and place on a paper towel–lined plate. dust with icing sugar and serve warm with compliments french vanilla ice cream.
