Pakoras are fritters made with vegetables such as potatoes, onions, cauliflower, zucchini, and a paste of chickpea flour. So, this is chickpea flour. I have turned this chickpea flour into a smooth paste with water. It is a fairly thick paste and it is all smooth, there are no lumps. If you wish, you can strain it through a sieve to make it nice and smooth. I am now going to add some vegetables. Well, I am going to add a little bit of spices to my chickpea flour paste first. So, a little bit of cayenne pepper, a little bit of tumeric and a little bit of whole cumin seeds. I am going to add a touch of salt. Just going to mix it all up until it is nice and smooth. And now we are going to add our vegetables to this spiced up chickpea paste. So, I have some potatoes I am going to add, some onions. Just going to mix it all up until it is well-coated with the paste. Now we are going to drop this into hot oil which is over medium heat. So, we are going to drop it by the spoonful to make fritters. I am just going to loosen it. Oh, beautiful. I am just going to flip them. The reason they are on medium heat is because the vegetables are raw. So I want to make sure that the fritters get completely cooked and the vegetables are softened. So this would take about three to four minutes in total. As soon as the fritters are done, I am going to transfer them to a plate and they are ready to eat. And here are the fritters, warm, spicy, delicious, ready to eat.
