How To Mince Jalapenos - as part of the expert series by GeoBeats. Here is what we are going to do. First thing is I am going to take a chefs' knife and I am going to cut off the top. The next thing I an going to do is I am going to cut this jalapeno in half. I am going to stand it up on my cutting board, and just slice it down the center. What will happen is you will see inside there is a bunch of seeds and a white vein, as they call it. Now that is where all the heat of the jalapeno pepper is. I like my guacamole hot, but not too hot. So, I am going to take out those seeds, and those veins, and then I am going to mince up my pepper. Here is how I am going to do that. First thing I am going to do is take the tip of my knife, and I am just going to use that to carve out the inside, and that will come right out. So with that I can take the seeds out and that will get rid of a lot of heat. The next thing I can do is I am going to cut this pepper into strips. So, I am going to cut little thin matchsticks, what is called a Julienne. Then I can take those separate little pieces, and I can stack these together, and start cutting those further. What I have got here is a diced jalapeno. But in my guacamole I want not big chunks of jalapeno dispersed throughout, because that is going to mean that someone is going to bite a piece of jalapeno and it is going to be a burst of heat in their mouth. What I want to do, instead, is make those pieces even smaller. So that the heat of the jalapeno kind of permeates throughout the guacamole. So the way I am going to do that is I am going to gather my pieces of jalapeno, and I am going to mince it. The way to do that is to put the tip of your knife on the cutting board, put your hand on the tip of the blade, and then just rock the blade through the grouping of the jalapeno. Then I can just take that off my knife, gather it together again, and keep going. I am going to keep gathering pieces, taking it off my knife, and mincing. By doing this over and over again, I am going to get smaller and smaller pieces of jalapeno. So that eventually, I will end up with perfect small, little, bit and I will have nice jalapeno flavor throughout my guacamole.
