Talk to them, taste their cakes, see what they make, see what they've done in the past. If you have good rapport with the baker, if they seem to really care about your design and your personality. If they ask you maybe personal questions, that's a good sign that they're interested in you and not just your wallet.
Find somebody who just cares. If they're not paying attention to you, they're not returning your calls, maybe its time to find somebody else. You might, you know, spend a little extra to do that but in the end you're going to be more comfortable, you're going to have a lower stress level, and your wedding's going to come out the way you want. So just make sure that when you go out and meet with bakers that you get along with them, that you like them personally, and you like the work that they do.
