Chicken stew with pineapple and paprika

Ingredients:
4 chicken fillets
25 g (2 tablespoons) butter
2 tablespoons cooking oil
1 pineapple cut in cubes
2 red paprikas cut in little bites
1 red chili fruit, chopped
2 tablespoons grated ginger
4 teaspoons curry powder
4 dl (2 cups) chicken broth
0,5 dl (1/4 cup) lime juice
salt and pepper
3 dl (1,5 cup) rice
3 dl (1,5 cup) coconut milk
3 dl (1,5 cup) water

Recipe:
Cook rice in 3 dl (1,5 cup) water and 3 dl (1,5 cup) coconut milk
Fry chicken shreds ca 5 min
Add pineapple and paprika bits, season with 3 teaspoons curry, 1 chopped chili fruit and 1 tablespoon grated ginger
Fry for about 5 min
Pour over 4 dl (2 cups) chicken broth and let simmer ca 10 min
Season with salt, pepper (be generous with pepper) and 0,5 dl (1/4 cup) lime juice

Recommended
