We spoke to Collin, head chef of Brett, a wine bar and small plate restaurant on Great Western Road in Glasgow’s Westend. Collin has travelled across the world - from the depths of Ho Chi Minh City to the outskirts of a secluded Perth - to perfect his craft. He believes that the pandemic has ignited the push for Glasgow’s food and restaurant culture to flourish, and that Great Western Road plays a significant role in that.
