00:00 Today I'm going to show you how to make chocolate chip cookies, but not just any ordinary chocolate
00:04 chip cookie, what I consider to be the perfect chocolate chip cookie.
00:08 These are the ingredients that you'll need and let's get started.
00:12 I'm going to start off with two 4.4 ounce Hershey's chocolate bars.
00:16 I'm using one milk chocolate and one dark chocolate and I'm only going to be using three
00:21 quarters of each bar.
00:25 And I'm just going to chop these into pieces and then put them into a bowl and set them
00:28 off to the side.
00:32 Now I'm going to take my butter and I've put it into a bowl.
00:34 I am using frozen butter, this is how I prefer to make them.
00:37 I'm just going to put this in the microwave just until it is barely melted and looks like
00:42 this.
00:43 Now I'm going to put the butter into the bowl of my stand mixer.
00:46 You can also use a bowl with an electric hand beater, that's fine.
00:49 And I'm just going to mix this until the melted butter is back incorporated with the solid
00:52 butter.
00:53 And I'm going to add in my white sugar and my brown sugar.
00:59 And I'm going to turn this on medium and I'm going to beat this until the sugars are dissolved
01:03 into the butter.
01:04 I'm going to scrape the beater bar off my mixer as well as the bowl.
01:11 And I'm going to add in my vanilla and I'm going to crack an egg into this.
01:16 And I'm going to mix this just until the egg and vanilla is incorporated into the butter
01:20 and sugar, no more than 20 seconds max.
01:25 And again I'm going to scrape down the beater as well as the bowl because we are done with
01:28 the mixer.
01:32 Now I'm going to add in my flour, my salt and my baking soda.
01:43 And then using a wooden spoon I'm going to mix this until it forms a dough.
01:46 Now when you make these you might be surprised how loose and soft this dough is and that's
01:51 what it's supposed to be.
01:54 And then I'm going to add in my chocolate chunks and I'm going to carefully stir those
01:57 in.
01:58 You want to be careful with the dough, you don't want to over mix it and you don't want
02:02 to break your chocolate up.
02:04 And when your chocolate is incorporated go ahead and cover the dough and put it in the
02:07 refrigerator to chill thoroughly for at least 4 hours before you bake the cookies.
02:14 And I'm going to turn my oven to 325 degrees Fahrenheit and let that preheat.
02:20 I'm going to take a spoonful of dough and I'm going to carefully roll this into a ball.
02:25 You don't want to over work this dough and you want it to remain chilled as you're working
02:29 with it.
02:30 And then just gently flatten it out and put it onto a cookie sheet.
02:33 You want to space your cookies about 4 inches or so apart because they do spread when they
02:37 bake.
02:38 And then I'm going to put them into the oven and I'm going to bake them for 10 to 12 minutes.
02:44 And when they are done they will be just barely light brown around the edges.
02:49 You really do not want to over bake these.
02:51 And then go ahead and remove them to a cutting board, to your counter, to whatever.
02:55 I don't suggest a wire rack for these because they are soft.
02:59 And there you have it.
