Cooking from scratch on the Keto and low carb diets was a challenge. I had learned to cook at cook’s training in college and cooked for 3 decades for my family. BUT, I used to think of dinner needing to include a protein, vegetable, starch (carb), and dessert (carb).

Now, I was doing away with most of the carbs and so had to learn how to cook meals that did not feel monotonous.

The Low Carb High Fat (LCHF) diet is the easiest one to follow along with the addition of a bit of starchy root vegetable and some fruit.

I usually bulk-cook and I’m in the kitchen for about 1.5 hours every other day. This saves on time in the kitchen and clean-up. Having this bulk-cooking day allows me to eat for 2-4 days by re-heating.
