Dhaba Style Chicken Curry

Chicken ½ kg

For The Marinade:
Ginger garlic paste 1 tbsp
Lemon juice 1 lemon
Salt 1 tsp

For The Curry:
Oil ¼ cup
Onions 2
Garlic 5 cloves
Ginger 1 inch
Green chilies 3 - 4
Cumin seeds 1 tbsp
Bay leaves 2
Cinnamon stick ½
Cardamoms 3
Peppercorns 6
Cloves 4
Tomatoes chopped 2
Turmeric powder ½ tsp
Red chili powder 1 tsp
Coriander powder 1 tbsp
All spice powder 1 tsp
Salt 1 tsp

For tempering:
Clarified butter 1 tbsp
Butter 1 tbsp
Green Chilies (cut lengthwise) 2
Ginger julienned ½ inch
Coriander leaves 2 tbsp (for garnishing)
Marinate the chicken pieces with ginger garlic paste, lemon juice and salt. Grind onions, ginger, garlic and green chilies to a fine paste with very little water. Heat oil. Add cumin seeds. Roughly pound all the whole spices (bay leaves, cinnamon, cardamom, peppercorns and cloves) and add to the oil. Once they start to splutter, add the onion paste. Cook the onion paste till it is reduced to a golden, brown paste. Add tomatoes, salt, turmeric powder, red chili powder and coriander powder. Cook till the tomatoes are mushy. Add the chicken and all spice powder and roast for a minute or two. Add 1 cup water. In a small pan, heat ghee and butter and add green chilies and ginger. Once they start to splutter, switch off the flame and mix the tempering into the curry. Top with coriander.


Rose Cake

Butter 100gm
Caster sugar 1 ¼ cups
Vanilla or rosegreen essence ½ tsp
Eggs 3
Flour 1 ½ cups
Baking powder 1 tsp
Ground cinnamon 1 tsp
Ground cardamom ¼ tsp
Mixed spice ¼ tsp
Ground nutmeg ¼ tsp
Milk ½ cup

To Make TheRose Drizzle:
Butter 30 gm
Icing sugar ¾ cups
Lemon juice 1 tbsp
Rosegreen essence ½ tsp

Beat butter and sugar together until light. Add vanilla or rosegreen essence, then the eggs one at a time. Sift together dry ingredients and add gradually to the butter mixture, alternating with the milk. Spread mixture in a greased and lined pan and bake at 180 degrees C 45-50 minutes or until an inserted skewer comes out clean. Cool cake completely.
