Hyderabadi Dum Chicken Biryani
Ingredients to marinate
Chicken 750gm
Papaya paste 2tbsp
Onion ground, fried ½ cup
Salt, pepper, turmeric as required
Yogurt ¾ cup
Ginger garlic paste 2tbsp
Lemon juice 2tbsp
Mint, coriander, green chilies as required
Onion fried ½ cup
Clarified butter ½ cup
All spice 1tsp
Screw pine essence ½ tsp
Nutmeg, mace powder 1tsp
Ingredients for rice
Boiled rice as required
Whole spice as required
Salt as required
Food color ½ tsp
Milk 4tbsp
Clarified butter ½ cup
Method:
Marinate chicken with all the ingredients to marinate for 3 to 4 hours , now spread chicken in pan . boil rice with salt, now drain and spread now heat clarified butter and pour on rice , now add milk, food color cook on high flame simmer and serve .

Ingredients
Chicken ½ kg
Clarified butter ¾ cup
Salt as required
Mint 4tbsp
Coriander ½ cup
Green chilies 8-10
Coconut powder 1tbsp
Cumin 1tsp
Dried fenugreek 2pinch
Ginger garlic paste 1tbsp
Curry leaves 6-8
Almonds ground 2tbsp
Lemon juice 2tbsp
Yogurt ½ cup
Coriander powder 1tbsp
Cream 4tbsp
Fried onion ½ cup
Cashew nut 6-8
Method:
In a pan heat clarified butter and fry chicken and remove . Now grind , coriander , mint and coconut . now in clarified butter add curry leaves, onion, yogurt, cumin, ginger garlic paste, salt and coriander powder now roast well . now add chicken in it add water and cook well , now add green masala, fenugreek and almonds, simmer add lemon juice , add cream cashew nuts and serve .
