The Better Way to Roast a Chicken

Making the perfect roast chicken for Christmas dinner, why not?
The first thing you need to do is to prepare the butter mixture, and rub the softened butter directly on the bird and sprinkle salt all over the skin.
You’ll have an incredibly juicy roasted chicken. This honey roasted chicken is so delicious and full of flavor from the garlic and herbs mixture.

This chicken can be prepared in advance, keep it in the fridge for up tp 24 hours before roasting.
I love to serve this roast chicken along with creamy mashed potatoes too and delicious chicken gravy.
*To check the doneness of the chicken :
pierce the chicken thigh until you see clear juices, or insert a meat thermometer into the thickest part of the thigh without touching the bone (75C).


In order to make the ultimate roast chicken, you’ll need :


1 whole chicken
40 gr butter
4 sprigs of thyme
3 sprigs of rosemary
1 tbsp mustard
Salt and pepper
1 lime
1/2 onion
2 heads of garlic
Olive oil
1 tbsp soy sauce
1.5 tbsp honey
