Chocó haze Cake Roll

Ingredients for Sponge:
Egg whites 5
Egg yolks 5
Caster sugar 60 grams (divided)
Milk 50 grams
Milk chocolate 50 grams
Oil 30 grams
Cocoa powder 20 grams
Flour 60 grams
Baking powder 1/2 tsp
Vanilla essence 1/4 tsp
For Soaking:
Water 100 grams
Sugar 20 grams
Coffee powder 1/2 tsp
For Filling:
Whipy whip cream 100 grams
Choco haze 100 grams
For Coating:
Dark chocolate 150 grams
Milk chocolate 100 grams
Oil 30 grams
Toasted Peanuts 100 grams
For Soaking:
Water 100 grams
Sugar 20 grams
Coffee powder 1/2 tsp
For Filling:
Whipped cream 100 grams
Chocoheze 100 grams
Whip cream to stiff peaks, add in chocoheze & use as a filling.
For Coating:
Dark chocolate 150 grams
Milk chocolate 100 grams
Oil 30 grams

Method:
Melt chocolate with milk & oil. Keep aside.
Now in stand mixer bowl beat egg whites with half the sugar & vanilla to make meringue & keep aside.
In the same bowl beat yolks with rest of the sugar until pale in color. Add in chocolate mixture. Give it a good mix then add

in all dry sifted ingredients. Mix gently then fold this with meringue carefully.
Pour the batter in a lined tray. Flatten it with spatula so it won’t get cracked.
Bake it at 165C for 15 to 20 minutes.
Toasted Peanuts/Almonds/hazelnuts 100 grams
Melt both chocolates, add in oil & crushed nut of your choice. And use on frozen cake roll.

Bagels

Ingredients:
Flour 750 grams
Water 400 grams
Honey 50 grams
Yeast 8 grams
Salt 1 tsp
Oil for greasing
Sesame seeds for topping
Sunflower seeds for topping
Pumpkin seeds for topping
Soda Water:
Water 2 litters
Baking Soda 1 tsp

Method:
In a stand mixer bowl, mix Luke warm water with honey, yeast & half the flour. Let it sit for 15 minutes. Then add in rest of

the ingredients. Give it a good mix & make smooth dough.
Grease a bowl with oil & let the dough sit until double in size then keep the dough in the chiller for overnight.
Remove from chiller, give bagel shape & let it sit at warm place for 1 hour.
Then give bath in soda water. Arrange in a baking tray. Brush with egg white & top it with desired seeds.
Bake it at 190C for 15 to 20 minutes.

Soda water:
Boil together to give bath to the bagel dough.
