Apricot Kofta Curry is a very exquisite dish of the Kashmiri cuisine. Koftas have a very nice sweet and tangy taste. The term kofta is mostly referred to as Indian meatballs. Generally, meat is mixed with spices and often other ingredients to form a paste. They can be grilled, fried, steamed, poached, baked, or marinated, and may be served with a rich spicy sauce or in a soup or stew. In this recipe, the pan-fried koftas are made with apricots, chicken mince and served in rich, creamy gravy. Mostly, kofta is served in a tomato-cream based gravy.
