Introduction
The term ‘Bhuna’ refers to a cooking technique in which a medley of spices are roasted and gently fried in oil. Traditionally, the technique was used for preparing meats but today, it has extended to all kinds of ingredients. The slow frying of the spices brings out the oils which flavours the whole dish. Bhuna Chicken Wings is an Indian take on the crispy chicken wings. We have spiced it up with some Bhuna masala which is usually a base to all the curries. So here’s the recipe for Bhuna Murgh – chicken wings marinated in a medley of flavourful spices and then cooked in its own juices. Try it out & let us know in the comments!

Preparation of the Marinade
500 gms Chicken Wings
2 tbsp Ginger-Garlic Paste
1 tbsp Green Chilli Paste
1 tbsp Red Chilli Powder
1 tbsp Coriander Powder
1 tsp Turmeric Powder
1/2 tsp Garam Masala Powder
1/2 tsp Black Pepper Powder
Salt (as required)
1 tbsp Curd
1 tbsp Coriander Leaves (chopped)

Preparation of the Spice-mix
1 tbsp Coriander Seeds
3-4 Green Cardamom Pods
1 Black Cardamom
1 tbsp Cumin Seeds
1 tbsp Black Peppercorns
10-12 Cloves
Salt (as required)

Searing the Chicken Wings
1 tbsp Oil
1 tbsp Ghee

Preparation of the Gravy
1 & 1/2 tbsp Oil
1 tsp Ghee
1 tbsp Black Peppercorn
1 cup Onion (chopped)
Water (as required)
2-3 tbsp Curd
2-3 tbsp Coriander Leaves (chopped)
Lemon Juice

For Garnish
Lemon Wedges
Coriander Sprig
Red Chillies
