Gajrela Recipe _ Carrots & rice pudding _ Gajar ke kheer

Winter's special and delicious dessert.
Simple and easy gajrela recipe in English || Gajar ke kheer recipe || How to make gajar ke kheer at home || Carrot and Rice pudding recipe in English

2 liters whole milk
250 g carrots (grated)
¼ cup rice (soaked and crushed)
½ cup sugar
1 tsp cardamom powder
3 - 4 tbsp. almonds (blanched and chopped)
3 - 4 tbsp. cashews chopped

Add soaked and crushed rice, carrots, and whole milk in a pot. Bring it to a boil and let it cook on low to medium heat for 15- 20 minutes. Stir often.
Mix cardamom powder with sugar.
Now add sugar mixture to the gajrela. And keep stirring in between to prevent it from burning.
Add half chopped almonds and cashews.
Cook it until the milk reduces and thickens.
Garnish with leftover nuts.
Serve hot or chilled.
