Zhang Yichang spent his entire career as a civil servant in the Chinese megalopolis of Shanghai. After he retired at the age of 60, he decided to move on to a completely different venture, running a bakery. Over the past 20 years, Zhang has earned a reputation for making tasty rice pastries that are a speciality of his hometown of Ningbo.
