We challenged chefs of three different skill levels - amateur John, home cook Julie, and professional chef Palak Patel from the Institute of Culinary Education - to prepare us a grilled fish. Once each of them had presented their creation, we asked food scientist Rose to explain the choices they made along the way - both good and bad.
