How to make caramel with condensed milk/dulce de leche

Caramel sauce /dulce de leche
Ingredients;
Condensed milk: 1 can
Directions;
Remove label from the unopened can of condensed milk. Fill a deep medium saucepan with water. Bring to the boil. Carefully place the can in the saucepan, ensuring there’s enough water to completely cover the can at all times, change side after every 30 minutes if needed topping up boiling water frequently throughout the cooking process. Cover and Simmer for 2 hours.
Ensure the can is completely covered with water at all times during cooking.
Carefully remove the can from the boiling water. Allow to cool completely before opening .
As it cools, whisk the caramel until it is smooth and free of lumps. Allow it to cool for about 20 minutes before serving or using in a recipe as a caramel spread or dip.
Transfer caramel in a glass mason jar and refrigerate upto 10 days
It is also possible to freeze the sauce in an airtight container (but not a glass jar) for up to 3 months. Defrost the sauce overnight in the fridge and warm gently before using. Once its thawed sauce finish up within 2 days.
